sugar (35g) | 2.5 tbsp + 1 tsp |
butter (20g) | 1.41 tbsp |
flour (30g) | 3.5 tbsp |
unsweetened plain yogurt (87.5g) | 3/8 cup |
yogurt breakfast muffin的做法
prep: melt butter
separate eggs
---- egg whites -----
beat egg whites in high speed till bubbles. add in sugar in third.
beat till dry, hard peaks form. (hold the shape of the beating; lift the mixer and the peaks on the whisks are straight w/ no curve)
---- egg yolk -----
1. pour yogurt into yolk mixture till smooth.
2. sift in flour in 2 parts and combine with a whisk in circle or zigzag
3. pour in melted butter
----- combine -----
add 1/3 egg white mixture to yolk mixture, then pour that mixture back to the yolk bowl
scoop batter into 8 molds till 80% full.

shake the pan to distrubute evenly.
Then bang on the counter to remove big bubbles before baking
bake in 300 F for 25 mins.

the muffins will puff up then collapse down in the oven. stop baking when it collapse a bit and turns golden
